-175g self raising flour
-2 eggs
-175 caster sugar
-150 butter
-rind of one lemon
-150ml LF Milk
-icing sugar
-tbl spoon of boiling water
-lemon rind
Double cream
Topping was a butter icing with lemon rind and added yellow food coloring for effect
-Beat the butter and sugar until mixed
-add beaten eggs and lemon rind
-add sieved flour and milk
We divided the mixture in to two 7 inch tins and baked for 30 min
once cooled we added the cream filling and the topping
